Shannon Coffey attended Auburn University on a full academic scholarship from 1999-2003. She attended her third year of law school at the University of Georgia School of Law in Athens, Georgia after finishing her first two years at the University of Tulsa College of Law in Tulsa, Oklahoma. During law school she clerked for the law firm Prior, Daniel, and Wiltshire in Athens, Georgia and went on to work for the law firm Forrester & Brim in Gainesville, Georgia where she handled medical malpractice and insurance defense suits.

Shannon traveled throughout Oklahoma, Illinois, Louisiana, and Nevada to compete in moot court competitions during law school. In 2004, she placed eighth in the nation for her oral argument in the National Health Law Competition in Carbondale, Illinois. Her NHLC appellate brief on the Fourteenth Amendment placed tenth in the nation in 2005. Her other awards include first place in the Frey Negotiation Competition in 2003, third place in the Hager Torts Oral Argument in 2005, and third place in the NHLC Appellate Brief Writing Competition in 2005. Shannon served as Speaker of the House of the Student Bar Association executive committee in 2004 and 2005.

Shannon joined Wiggins & Norris, LLC in 2007. Her practice includes adoption, child custody, modification of support and support recovery, visitation, divorce, domestic disputes, family law, separation, termination of parental rights, paternity and legitimation, personal injury, and a variety of other civil litigation cases. She serves as a supervising attorney for Diakonia Christian Legal Services in Athens, and is a member of Redeemer Presbyterian Church in downtown Athens. Shannon is married to Chris Coffey and they have one daughter, Melissa.
